Make your own extract!

Making your own vanilla extract is surprisingly easy. Here is all you need to do:
  1. Use 1/4 pound of beans for every quart of extract that you want to make.
  2. Chop the beans into 1/2 inch pieces. Slicing is OK, but it is a waste of time.
  3. Use 70 to 90 proof Vodka. I use Crater Lake Vodka because its a local Bend, OR product, but you can use bottom shelf.
  4. Shake daily for at least 3 months (six is better). Voila! Homemade Vanilla Extract!
Sure, you can use coffee filters or some other method to strain out the beans and all the little seeds. I just used cheesecloth to get the big bits of bean out, leaving most of the flavorful little seeds in the extract. That's where I got the name "Dirty Vanilla".
